Which of these potatoes you think you should buy and which one you need to avoid?
Between small, medium, and large potatoes, medium potatoes are the best option.
Now why?
Since farmers use nitrogen fertilizers, it usually causes nitrate to accumulate in potatoes.
Small potatoes cannot convert nitrate into other compounds because they are not grown enough, and large potatoes, due to their bigger size, may have absorbed and stored more nitrate. Hence, considering that the excessive nitrate use is harmful to the body, it is better to choose medium-sized potatoes.
We should not buy these potatoes either!
Why?
Because these green parts accumulate a substance called solanine, which is harmful to the health and can reach the fetus through the placenta in pregnant women, producing negative effects on the fetus.
Beside the solanine, sprouted potatoes need nutrients to grow, and therefore, as they begin to grow, the nutritional value of the potato would decrease.
Potatoes with soft and loose skin are older, and have lost most of their moisture and nutritional value, leaving them with a lower shelf life, so we should not buy these too.
Potatoes with cracks and surface cuts should have no place in our shopping cart because such defected parts provide a suitable place for microbes to grow.
On the other hand, these cracks damage the potato's texture and cause its nutrients to decompose more quickly, causing it to lose moisture and quality.
