Unfortunately, heating honey turns it into a sweetened substance with no properties, and on the other hand, it produces a compound called hydroxymethyl furfural or HMF in honey.
HMF is a carcinogenic compound that is produced in food containing acid and sugar under improper storage and heating conditions, and the quality of honey can be determined by measuring its amount in food laboratories.
